Dennis Sandris Nielsen

Dennis Sandris Nielsen is a professor in food microbiology at the Department of Food Science at the University of Copenhagen.

He has worked with the gut microbiome for about 16 years, and has a background in food science and a Ph.D. in fermentation of cocoa beans.

Dennis is also head of the research group Food Microbiology, Gut Health, and Fermentation with two focus areas: Food fermentations and starter cultures & Gut microbiomes and gut health.

About the episode

Fermentation is in short an old preservation technique, but fermentation is more than that. In this episode Dennis Sandris Nielsen explains what the fermentation process is, not just in food, but also in the gut, and why this is so important for our health.

Dennis also talks about how we through the immune systems response to the fermented foods can trace back to our ancestors and an evolutionary shift around nine million years ago and can you make fermented plant based replacement foods that is as delicious in taste and texture as a steak.
